Spicy Watermelon Soup

Ingredients

5 cups of chopped and deseeded watermelon

1 tbsp crushed ginger-garlic 

3 tbsp chopped mint leaves

½ tsp pepper powder

1 tsp Olive oil

A pinch of Himalayan salt

1 tsp coriander leaves

Method

Saute crushed ginger-garlic in olive oil and keep it aside to cool.

Puree watermelon and mint leaves in a blender finely.

Take a saucepan add the puree and fried masala, pepper powder and salt, and simmer until it thickens a little bit.

Season well and then chill it for at least 2 hours before serving.

Add a few ice cubes into the soup, drizzle olive oil and garnish with a sprig of mint and coriander leaves and serve.

Ingredients

1 medium-sized bottle gourd

For the Marination

3 tbsp lemon juice

½ tsp chilli powder

2 tsp garam masala

For The Stuffing

1 cup diced onion

2 medium tomatoes diced

3 green chillies chopped

1 tsp jeera seeds

1 tsp ginger paste 

2 tsp finely chopped garlic

1 cup grated paneer

1 tbsp chopped coriander leaves

Oil 

Salt and pepper to taste

Method

Peel, de-seed and slit horizontally bottle gourd and blanch it in boiling water.

Mix it with marination and keep it aside for an hour.

In a pan heat oil and add jeera seeds and all other ingredients for the stuffing and saute well for 5 minutes.

Keep the filling inside the bottle gourd and tie it with a string.

Wrap in foil and bake in an oven t 180 C for 15-20 minutes.

Serve hot with green chutney.
