Tricolour Vegetable Biryani

Ingredients

For the Green Layer:

  • 1 cup finely chopped fresh spinach 
  • 1 cup chopped mint leaves
  • 1 cup chopped coriander leaves
  • 2 chopped green chilies
  • 1-inch grated ginger
  • 4 cloves of garlic
  • 1/4 cup yogurt
  • Salt to taste

For the White Layer:

  • 2 cups-soaked basmati rice 
  • 1 large onion, thinly sliced
  • 1/2 cup yogurt
  • 1/4 cup milk
  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • Salt to taste
  • Saffron strands soaked in warm milk (for coloring)

For the Orange Layer:

  • 1 cup mixed vegetables  such as carrots, peas, and bell peppers), diced
  • 1 large tomato, chopped
  • 1 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • Fried onions and finely chopped fresh coriander for garnish

Method

Green Layer:

  • In a blender, combine spinach, mint leaves, coriander leaves, green chilies, ginger, garlic, yogurt, and salt
  • Blend until you get a smooth green paste
  • Set aside

White Layer:

  • Boil water in a pot
  • Add soaked basmati rice and cook until it is 70-80% done. Drain and set aside
  • In the same pot, heat ghee
  • Add cumin seeds and sliced onions
  • Sauté until the onions are golden brown.
  • Add yogurt, milk, and saffron-infused milk to the pot
  • Mix well
  • Add the partially cooked rice to the pot and gently mix with the yogurt mixture.

Orange Layer:

  • In a separate pan, heat oil. Add the mixed vegetables and sauté until they are slightly tender
  • Add chopped tomatoes, red chili powder, and turmeric powder
  • Add salt to tase and garam masala
  • Cook until the tomatoes are soft, and the mixture forms a thick gravy

To Assemble:

  • Take a deep, heavy-bottomed pan
  • Divide the partially cooked rice into three equal portions
  • Mix the green paste with one portion of rice and spread it evenly at the bottom of the pan
  • Place the second portion of white rice over the green layer
  • Top it with the orange vegetable mixture, spreading it evenly
  • Finally, layer the remaining white rice over the orange layer
  • Garnish the top with fried onions and chopped coriander leaves
  • Cover the pan with a tight-fitting lid
  • Cook on low heat for about thirty minutes or until the rice is fully cooked and aromatic
  • Gently fluff the layers with a fork, ensuring the colors remain distinct
  • Serve the tricolor Vegetable biryani garnished with additional fried onions and fresh coriander leaves
