Ingredients:
- 500g salsify peeled and sliced into thin pieces
- 2 tbsp mustard oil
- 1/2 tsp cumin seeds

- 2 green chilies
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- 1/2 tsp red chili powder (optional)
- 1/2 tsp dry mango powder
- Fresh cilantro leaves, chopped for garnish
Method
- Peel the salsify root and cut it into thin slices. To prevent browning, you can soak them in water with a little lemon juice or vinegar
- Heat oil in a pan and once hot, add cumin seeds and let them splutter
- Add the chopped onion and sauté until they turn golden brown
- Add the ginger-garlic paste and green chilies and cook until they turn fragrant
- Add the sliced salsify to the pan and stir well
- Add turmeric powder, coriander powder, garam masala, red chili powder, and salt. Stir everything together, making sure the spices coat the salsify evenly.
- Cover the pan and let it cook on low heat for about 10-12 minutes. Stir occasionally to prevent sticking.
- Once the salsify is cooked and tender, add the dry mango powder. Adjust salt and spices if necessary.
