Romanesco Cauliflower Curry

Ingredients

1 medium Romanesco cauliflower, cut into florets

2 medium onions, finely chopped

3 pureed tomatoes

2 green chillies

1 tsp cumin seeds

1 tsp turmeric powder

1 tsp red chilli powder

1 tsp ground coriander

1/2 teaspoon ground cumin

Salt to taste

3 tbsp oil

A bunch of cilantro leaves for garnish

Method

  • Heat oil in a pan
  • Fry Romanesco cauliflower until it becomes crispy and keep it aside
  • In the same oil add cumin seeds and let them splutter
  • Add onions and sauté until they become golden brown
  • Add green chilies. Sauté for a minute and add Stir in the tomato puree and cook until the oil starts to separate from the mixture
  • Add turmeric powder, ground coriander, red chili powder, ground cumin, and salt
  • Mix well and cook for a couple of minutes
  • Add the Romanesco cauliflower florets.
  • Let it cook for a few more minutes
  • Once the cauliflower is cooked, garnish with cilantro leaves
