2 cups rice-cleaned and soaked for 30 minutes

1/2 cup sliced onions

½ tsp mustard seeds

2- dry red chillies

1 tsp cumin seeds

5-10 no’s cashew

2 green chillies finely chopped

2 Tbsp paste of mint leaves

A few drops of lemon juice

2 Tbsp oil

Salt as required

Method

 In a heavy-bottomed pan, heat the oil and add the mustard, cumin seeds, dry red chillies and cashews and fry for 1-2 minutes. Now add the onions, green chillies and sauté till transparent, once done add rice, pudina paste and blend well for a few times and add 3 cups of water.

When the rice is boiled, sprinkle a few drops of lemon juice, add salt as required and close the pan with the lid and cook in medium heat for 15-20 minutes.

Tangy pudina rice is ready to be served hot with papad.

¼ cup coriander and curry leaves

1 tsp urad dal

1 tsp Bengal gram dal

½ inch ginger

¼ cup sliced onion

1 tsp tamarind paste

2-4 green chillies

salt as required

For Seasoning

½ tsp mustard seeds

¼ urad dal

1 red chilies

Pinch of hing

1 tsp oil

Method

In a pan dry roast urad and chana dal and keep it aside.

Pour oil sauté onion, green chillies and ginger for 2 minutes and finally add all the leaves mix well and switch off the stove.

In a blender add coconut, dal and sautéed mixture, tamarind paste, salt and grind well into a fine paste.

In a pan temper mustard seeds, red chillies, urad dal and fry well, finally add Hing powder and switch off.

Pour the tadka over the chutney, serve with hot idly or dosa.
