Semal Sabzi
Ingredients
250 grams tender semal buds
2 potatoes
Onion paste
1 tbsp ginger-garlic paste
1 cup tomato paste
1 tsp red chilli powder
1 tsp turmeric powder
1 tsp garam masala powder
3 tbsp mustard oil
1 tsp fenugreek seeds
Salt to taste
Method
- Chop the buds into four parts
- Heat mustard oil and add chopped semal
- Fry for a few minutes, add potatoes and keep aside
- Heat the remaining mustard oil and add fenugreek seeds
- Wait till they turn light brown and add onion paste
- Fry the paste till it becomes pinkish brown
- Add the ginger-garlic and tomato paste and salt
- Cook till the mixture becomes glossy
- Add the powdered spices and mix well
- Add the partly fried semal and potatoes to the cooked spice mixture
- Add water and cook for 15 minutes
- Serve hot with rotis

Ingredients
2 cup yoghurt
2 fresh semal flowers
1 cucumber
2 onions
1 tablespoon roasted cumin powder
Pinch of chili powder
Salt to taste
Coriander leaves
Method
- Boil semal flowers for a few minutes
- Drain water and keep aside
- In a bowl add cumin powder, salt and curd and mix well
- Add chopped coriander leaves to the curd mix
- Now add chopped cucumber and semal flowers to the mixture
- Mix all the ingredients well
- The raita is ready to be served
- Garnish it with chilli powder
