Plantain Stem Stir Fry

Ingredients:

1 medium-sized plantain stem

½ cup curd

¼ cup grated coconut

¼ tsp turmeric powder

Salt, to taste

1 tbsp moong dal

2 tsp groundnut oil

½ tsp mustard

1 ½ tsp urad dal

1 red chilli

10 – 12 curry leaves

Method:

Peel out the external ring surrounding the plantain stem and cut it into small, thin slices.

Place the cut plantain stem pieces in a bowl with some water and beaten curd, to prevent them from discolouration.

Transfer the cut plantain stem pieces into a bowl with plain water, moong dal, salt and turmeric powder and soak for 5 minutes.

Drain out the excess water from the flavoured plantain stem slices with moong dal.

Heat oil in a kadai on medium flame, add the mustard seeds and once they begin to pop, add the urad dal, red chilli, curry leaves and sauté for 2 -3  minutes.

Add the plantain stem slices with moong dal, fry for 5 minutes and then close the lid of the kadai, to allow the vegetables to cook completely on low flame.

Switch off stove after about 10 minutes, sprinkle the grated coconut to the plantain stem stir fry and serve hot with rice or roti.

Ingredients:

2 cups pumpkin, peeled and cut

½ cup flax seed extract

¼ cup sugar

1 tsp baking powder

1 tsp baking soda

2 tsp cinnamon powder

1 tsp ginger powder

A pinch of salt

2 tbsp sunflower oil

3 cups baking flour

Method:

In a deep dish bowl, mix the pumpkin slices, flax seed extract, sugar and oil, adding some water to make a paste.

Add the baking powder, baking soda, cinnamon, ginger, salt and baking flour and blend until a homogenous mixture is obtained.

Preheat the oven to 1800 F.

Transfer the batter into a loaf pan, placing a toothpick in the centre.

Bake for 30 – 40 minutes until the toothpick can be pulled off smoothly.

Cool the loaf of pumpkin bread at room temperature for about 15 minutes, slice it evenly and enjoy with some hot tea.
