Nutmeg / Jaiphal [Botanical name: Myristica Fragrans] is a tree, indigenous to the Malay Peninsula & penang, has been successfully cultivated in Madras and Southern India (Niligiri hills & Malabar coast). The seeds are the nutmegs of commerce and the arillus surrounding the seed within the outer shell constitutes, when dried, the product known as mace. Nutmeg is a spice found in many kitchens worldwide. It’s warm, nutty flavour pairs well with many foods, making it a popular ingredient in sweet and savoury dishes alike. Ayurveda mentions Nutmeg as mild bitter, pungent in taste & hot in potency.
