Reishi Mushroom Veggie Soup
Ingredients
1/3 cup dried reishi mushrooms
3 cups vegetable broth
1 tbsp olive oil
1 chopped onion
2 cloves garlic (minced)
2 finely diced carrot
2 tbsp fresh chopped coriander
1 sliced bell pepper
1 cup sliced any other mushroom type
A small cup of finely chopped tomatoes
1 tsp dried thyme
1 tsp dried oregano
¼ tsp black pepper powder
Salt to taste
Method
Soak dried reishi mushrooms in hot water for few minutes until they become soft
Once softened, slice them into thin pieces
In a large pot, add olive oil and chopped onion and minced garlic to it
Sauté until they become translucent
Add the diced carrots, coriander, bell pepper, zucchini, and sliced mushrooms into it
Let the vegetables soften
Pour in the vegetable broth and add dried oregano, salt, and pepper
Stir well
Bring the soup to a boil and let it simmer until the vegetables are tender
Add the diced tomatoes to the pot and simmer for another ten minutes
