Christmas celebrations and cakes are synonymous, and it is that time of the year, where all calorie counting can go out of the window. If you have not done cake mixing for this Christmas, don’t lose heart. Here are easy-to-do, yummy cakes for this festive season, sans eggs! Whip the batter, bake it and share it with all your loved ones. 

Eggless Plum Cake

Plum cake is a must-have cake during Christmas season. A fusion of different types of dry fruits and nuts, this fluffy yet crunchy cake is an absolute delight.

Ingredients (1 cup = 255 ML)

Dry Fruits For Soaking:

¼ cup raisins, chopped

¼ cup figs, chopped

¼ cup cherries, chopped

¼ cup apricot, chopped

¼ cup dry seedless dates, chopped

1 cup grape juice

Soak all the above ingredients in grape juice for 2 hours, till all the dry fruits absorb juice.

Ingredients For Cake Batter:

1 and ¼ cups warm water

1 cup brown sugar powdered

2/3 rd cup vegetable oil

2 cups maida flour

½ tsp baking soda

1 tsp baking powder

½ tsp cinnamon powder

A pinch of salt

¼ tsp nutmeg powder

½ tsp cardamom powder

½ tsp orange peel

¼ tsp almonds, chopped

¼ tsp walnut, chopped

Method:

Soak all the dry fruits in grape juice for 2 hours.

In a bowl add warm water, powdered brown sugar and oil, mix well.

Sieve maida, baking powder, baking soda, cinnamon powder, nutmeg powder, cardamom powder, salt and orange zest.

Blend well until all the ingredients are mixed together and finally add the squeezed dry fruits, almonds and walnuts, give it niece stir.

Pour the cake batter into the greased mold and bake at 180 C for 40 minutes.

Your yummy delicious plum cake is ready to be served.

Sponge Cake

Sponge cake is a very simple, easy to make and widely popular delicacy during Christmas celebrations. At least a hundred different flavours and variations can be made using sponge cake as a base.

Ingredients (1 cup = 255 ML)

½ cup /100 gm melted butter

2 cup maida

1 cup sugar

¾ cup milk

¼ cup buttermilk

1 tsp vanilla extract

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

Method

In a large bowl take ½ cup butter and 1 cup sugar.

Beat well until the butter and sugar mixture turns creamy.

Add ¾ cup milk, ¼ cup buttermilk and 1 tsp vanilla extract.

Blend until everything is combined well.

Sieve 2 cups of maida, 1 tsp baking powder, ½ tsp baking soda and ¼ tsp salt, make sure there are no lumps.

Combine well using cut and fold method.

Pat well to remove any air incorporated into the batter.

Pour the batter into a greased tray and bake the cake in preheated oven at 180 C for 45 minutes.

Delicious sponge cake goes very well with tea.
